What's For Dinner (last night).

Last night I tried out a recipe from the Oh-So-(Grating-on-my-nerves)-Perky Rachael Ray. As some may know, Rachel just isn't one of my favorite TV personalities... but the girl can sho nuff cook it up! Almost every recipe of hers that I've tried has turned out wonderfully. This was no exception! Ladies and Gents, I give you, the
Sloppy Chipotle Joe!


You'll need:+


Plus, One pound of ground sirloin. Browned up in 2 Tablespoons Olive Oil.

While your meat's browning, roughly chop your veggies and mince your garlic. I ended up only using about half of the red and green bell peppers. (What's the candle for? Not the ambiance. It burns off the fumes from the onion so you don't get all weepy and mascara-less.)


Once your done chopping, the meat should be done too. Add all the veggie goodness to the pan.

While those are cooking off, take the can of chipotle peppers in adobo sauce and pop the whole thing in a blender or food processor.

You'll only need an itsy bit of this, so Rachel recommends putting the rest in a ziploc, labeling it and freezing it for another use next time. (Another use could be using it to make my yummy slow-cooked pork tacos!... recipe to come. :)


Anyway, add about a Tablespoon of the pepper puree. (or more if you like it super HOT!)


Season it all up with some S & P. (Or be like me, and use a dash of Paula Deen's House seasoning. I've been using this in everything lately, and it rocks.)


Give it all a good stir, and let it have a little alone time. In a small bowl add 2 Tablespoons brown sugar, 2 Tablespoons Worcestershire, and about a cup of tomato sauce.




Add it to the other goodness.

Now, here's where you have to make a decision. Do you like a super-delicious-saucy-sloppy-sloppy joe? Or do you like it a bit on the dryer, less-saucy side? Opt for the sauce, people. Add about half a cup or so of beef broth to the pan.

At this point, it's in the prime taste-test stage. So let your man feel involved in the process and let him do the honors.



I think Rachel used Kaiser Rolls, but I love onion rolls, and it really doesn't matter, cause you could ladle this stuff into an old sneaker and it would still be AH-mazing. It's your choice.


Butter 'em up...


Slap 'em on a grill pan...





...And you're in business!

What was that 'Test' thing? When I clicked on it, it told me your blog didn't exist! I was all like *gasp*
